Sour Plum Mochi Martini
Good news everyone! Mochi doesn't dissolve in water! You may think that's fairly obvious (after all rice doesn't - but rice starch does) and Google wasn't giving a simple answer. This uses the plum mochi from Sakuraco Box Three - May: Mochi and Sakura. The cocktail should be a combo of sweet, salty, fruity and sour.



Version Two
creates defined colour bands

Martini Glass
*
1 Lemon
*
Ground salt
*
Soda Water
*
30ml Maraschino
*
15ml Plum Brandy
*
Kubota Confectionary's Plum Mochi

Line the rim of the martini glass by wiping with a lemon slice, then rolling the rim in a pile of ground salt

Version One
*
Add 15ml lemon juice, maraschino and brandy to cocktail shaker with ice
*
Shake and strain
*
Pour into glass and top with soda water
*
Add mochi and serve

Version Two
*
Add 15ml lemon juice to glass and add approximately 150ml soda water
*
Add maraschino. Allow to settle
*
Add Brandy. Allow to settle
*
Add Mochi

Notes:
*
I've used ml for measurements instead of shots, because a) metric vs. imperial
b) half shot vs. shot vs. double shot is not standard on jiggers
*
If you've already eaten all your mochi, a frozen lychee works very well as a stunt double - tastes good too.
